Add a User Activity Timeline

Hi team, I have experience building React/Next.js frontends and dashboard UI components.

For #168 - My approach would be to create a reusable ActivityTimeline component that fetches user-specific activities (saved grants, submitted applications, account updates), sorts them chronologically, and displays them in a clean vertical timeline. I will ensure data is filtered by the logged-in user so users only see their own activity, and handle empty/loading states.
Happy to follow the existing project design system.
