First pixi support was implemented in #981, but there is more to be done.

Todo:

• convert release workflow to pixi
• more inspiration in move to pixi hatyan#431
• anything from the contributing docs that does not mention pixi yet
• consider also updating the installation docs for regular users
• update contributing docs
