Zigbee2MQTT as Zigbee End Device

Can you build a Zigbee End Device with Zigbee2MQTT ? i.e. not a controller/coordinator.

Goal is to have a Raspberry receiving commands and sending stati for building a watering system, over Zigbee.
Raspberry would run Zigbee2MQTT and a Sonoff CP210x stick, control water pump and read moisture sensors.

Is this possible?

Guess it should be easier with Zigbee2MQTT than with an esp32 C6.

No.. Zigbee2MQTT can only utilize the dongle as a coordinator

And could it be changed to function as endpoint? Or is it impossible by the dongle hardware?
