Add energy as a third dimension to Stommel diagrams, enabling visualization of process energy scales alongside time and space.

Wire energy_plotting into main pipeline
Energy plotting code needs to be written from scratch and integrated into the existing add_processes / add_predefined_processes pipeline.
Add CLI flag --color-mode energy_type|category
Allow switching between coloring processes by category (Physical/Biological/Chemical) and by energy type (chemical/radiant/kinetic/potential).
Add uncertainty estimates
All energy values are currently point estimates with no error bars or ranges. Add uncertainty estimates from literature for each process energy classification.
Mesoscale eddy energy classification review
Need to determine the correct energy classification for mesoscale eddies — they have both kinetic and potential energy components.
