Referencing it in the package.json once it is available (should be 256x256) in the icon property is a no-brainer...
Maybe just take the https://commons.wikimedia.org/wiki/Category:GNU_gettext#/media/File:Official_gnu.svg, placed into a white circle, possibly overwriting it with some accents/umlauts in black?
