[Bug] Escape regex backslashes in release-it config for scoped commits

Context

Commits with scopes (e.g., docs(adr):, fix(auth):) are not appearing in GitHub release changelogs. So having a commit like docs(adr): some description will result in an empty changelog: https://github.com/NASA-IMPACT/veda-ui/releases/tag/v6.20.3
