Will preface this by saying I know nothing about modding or the infrastructure behind the game.
I think from a realism point of view, grain piles shouldn't have a static moisture value. Playing on Kinlaig at the moment and I happen to of grown up on farms in Scotland and crop moisture was always an issue so the two common methods of drying which I saw was to use the fast option: industrial dryers (essentially silos with fans blowing air through them), or the slow option: just leaving them in piles inside barns waiting for the moisture to come down hoping they dont spoil.
Again, I know nothing about the feasibility of this but I think that if realism is the goal that grain pile moisture levels should be variable so the gameplay loop is if you're forced to harvest without ideal moisture levels is: harvest > pile for drying > store in silo to maintain moisture level/sell/deliver to production point.
Just a thought while writing this, maybe a financial penalty when delivering non A grade crops to your owned production point? But could be getting ahead of myself.
Aside all this, love what youve done, love the extra brain/guess work when it comes to harvesting.
