Emoji picker uses deprecated emojione assets and lacks Unicode 13–16 emojis

Currently, the emoji picker appears to rely on the emojione / emojione-assets package, which has been discontinued and renamed. As a result, the available emoji set seems limited to around Emoji 12, and newer Unicode emojis are missing.

For example, emojis introduced in Unicode 13 and later (such as 🪓) do not appear in the picker or search results.

According to the emojione repository, the project has been deprecated and replaced by newer tooling (e.g., emoji-toolkit). This may explain why Rocket.Chat emojis have not been updated for several Unicode releases.

Closing this ISSUE in favor of #39411, where we’re replacing Emojione with native Unicode emojis.
