Support latest NodeJS version

We should at support for NodeJS 24. Going forward we should support latest and latest-1.

While here:

• update dependencies
• ensure latest GHA actions used
• make function config changes needed when ServerlessOpsIO/serverlessops-catalog-api moved to nodejs24.x

Hadd issues when moving to nodejs24.x in ServerlessOpsIO/serverlessops-catalog-api. Fixes included:

• Metadata.BuildProperties.EntryPoints: function.js -> function.ts
• Properties.CodeUri: change leading path ./dist -> ./src
• ???
