[FIX] Refactoring for I²C lab testing method

Description

The I²C lab was not fully tested to the highest standards because it introduces high hardware coupling, and it got very complex to set up for no real benefit, so the original I²C lab had rough testing. This issue aims to sort it out and perform proper testing on the lab.

Renode's I²C / EEPROM driver is allegedly broken, which makes it impossible to really test the I²C behavior (I thought about writing mocks, but the whole idea of Renode was to simulate the hardware, so mocks would defeat the purpose). I will be closely following this issue for updates from the maintainers. In the meantime, the testing for this lab will be marked as complete.
