Instead, we introduce a stateful WinePrefixRepo class that lives inside StartupData. Such a setup plays nicer with Flutter's AnimatedList.
That gives us more flexibility for the things to come. In particular, that makes it easier to implement a state where a prefix is being cloned into (which may well be a long operation).
