docs: Windows setup guide and compatibility

Summary

We need someone to go through the full setup of Traul on Windows and document the process in the Getting Started guide.

What needs to happen

• Test full installation on Windows (Bun, SQLite with sqlite-vec, Python for Telegram connector)
• Document any Windows-specific steps, gotchas, or alternative commands
• Update README Getting Started section with Windows instructions alongside macOS
• Identify and fix any code that assumes macOS/Unix paths or tools (e.g., Homebrew SQLite path)
• Test all connectors on Windows — especially Telegram (Python subprocess) and WhatsApp (Docker/WAHA)
• Verify the daemon runs correctly on Windows

Context

Currently the setup assumes macOS with Homebrew. Related to the Linux support item in #8. The goal is to make Traul accessible on all major platforms.
