- Replace the freeform input with a select control
- Provide these options: Men, Women, Everyone
- Preserve the existing onboarding flow and saved profile behavior

- The field renders as a dropdown on /onboarding
- The dropdown includes Men, Women, and Everyone
- The selected value is saved with the rest of the onboarding profile data
