Add check to make sure the temporary directory it plans to use already exists

As coversheets will use a specific directory to store intermediate PDFs for the cover-sheeting process, it is best to check this first rather than processing a load of documents to coversheet and marking them as failed when in fact the issue is generic not specific to the document.
