[TEST] [router] Record Soroswap response fixtures

Description
tests/hop-swap-soroswap.spec.ts is the only swap test and the connector has no recorded responses, so any deeper test would depend on a third-party API being up.
Requirements

• Record real Soroswap quote and route responses as fixtures, including at least one error shape.
• Note when they were captured.

Acceptance Criteria

• Swap tests can run with the network unplugged.
