Step 1: Plant spinach seed ½ inch (12mm)deep. Cover seed lightly with soil.

Step 2: Refrigerate seeds 1 week before sowing to help germination.

Step 3: Sow seed 2 to 4 inches (5-10cm) apart.
</li>

Step 4: Space rows 12 to 14 inches (30-35cm) apart.

Step 5: Spinach seed will germinate in 5 to 9 days at 70°F (21°C) Germination will take longer if the soil is cooler, about 21 days at 50°F (10°C).

Step 6: Thin spinach to 12 inches (30cm) apart when seedlings are 3 inches (7cm). Thin to the strongest seedlings. Remove weak seedlings by cutting them off at the soil level with scissors.

<p class = "info">Plant spinach seeds an inch apart in rows 14-18 inches apart and cover the seeds with a 1/2 inch of soil. Keep the soil moist and after the seeds germinate thin them to stand 3-5 inches apart. Most gardeners like to do this in several passes to determine the strongest plants to save.</p>

<p class = "info">Small spinach leaves can be harvested with scissors by simply cutting the leaves at the stem. One way to do this is start harvesting the outer, older leaves first and then gradually working your way in to the center of the plant as those leaves mature. You can also just cut the whole plant off at the base. Harvesting spinach by this method will often allow it to re-sprout and give you another partial harvest. When considering how to pick spinach, decide if you will use the entire plant immediately or just need a few leaves.</p>

<p id = "pTag3">Spinach, (Spinacia oleracea), is widely grown in northern Europe and the United States. Spinach is marketed fresh, canned, and frozen. Spinach is served as a salad green and as a cooked vegetable. The edible leaves are arranged in a rosette, from which a seed stalk emerges. The simple leaves are somewhat triangular or ovate and may be flat or puckered. The flowers are inconspicuous and produce small dry fruits. Spinach requires cool weather and deep, rich, well-limed soil to give quick growth and maximum leaf area. Seeds can be sown every two weeks from early spring to late summer, in rows 30 cm (12 inches) apart. Spinach lasts for only 10-14 days and should be stored within 40 - 51F to reduce spoilage.</p>
