Add 5.1/trunk smoke test to master builds

What is missing?

We don't test the nightly build of trunk in our smoke tests to see early on if something starts to fail. We should add this as one of the smoke-tests (test-all-the-things).

This requires an updated version of k8ssandra-client (newer than 0.6.1) to function.

Why is this needed?

For example, current trunk will not work with the old k8ssandra-client because config building failed. This was part of manual testing that revealed it.
