Linux build instructions do not work - SDL3 build error [3.0.7]

Confirmed on Debian 13, Debian 12, and Ubuntu 22.04, all x64.

When attempting the build-deps.sh step of the build, SDL3 fails to build, which causes subsequent steps to fail to build because the SDL3 library was not built.
