Remove {{ now | quote }} to prevent unnecessary updates and immutable field errors

Some templates use {{ now | quote }}. This causes Helm to create new ReplicaSets on every upgrade, even when nothing changed.

It also breaks the migrator Job with:

invalid: spec.template: Invalid value: core.PodTemplateSpec
```

Are there good reasons for doing so?
