Prose (in InfoOverlay) in separate files

An idea from @jokroese: move a lot of the prose in some files in separate (Markdown) files.

This will both make managing the prose easier and work on the components more comfortable.

If putting it in Markdown creates problems (because Markdown + custom CSS can be meh) we could also split the prose off into separate Svelte components.
