Configuration options for max supported protocol version, cassandra version

It would be nice if there was a way to configure Scassandra in the following ways:

• Set the max supported protocol version.
• Behave like a particular version of cassandra.

Mocking a cassandra version would implicitly set the max protocol version and could disable features not supported by that version of cassandra.
