Better default font settings?

In Gnome there is a globally defined "Document Font" and "Monospace Font" stored in gsettings org.gnome.desktop.interface.

Currently Folio defaults to fc-match Sans and Monospace which on my system (Ubuntu) are Noto Sans and DejaVu Sans Mono.

I think it would be better if Folio defaulted to the gsettings fonts, as this would be consistent with what other apps do (on Ubuntu these are Ubuntu Sans and Ubuntu Mono).

In particular DejaVu is an ugly (!) old font that isn't really used on most modern Distros.
