For example, if I get a Gamesir Wireless controller, which is not compatible with Xbox XS, can I make it work on the console with this adapter?

No, New Xbox systems are not supported, likewise with the ps4/5 , switch being the one exception

I am curious as to why is that the case? I guess it is because they link their controllers with special ids/fuckery to make it unemulatable, but then how come there are Chinese knock off controllers that can emulate being original or these kits that lets you use mouse and keyboard as a controller on the xbox series s/x/one?
