[Bug]: LLM Provider version can be updated to a non-existing version

Description

Even though a version validation exists at the creation step, update path does not enforce the same.

Creation step validation:

Once created, can be edited to a non-existing version like so:

Steps to Reproduce

1. Create LLM Provider
2. Update the provider version from the overview
3. Notice the successful rest API response
4. Gateway deployment and invocation also appear to be working
