Reorganize repo structure

The repo has Swift, Rust CLI, and Rust GTK code all at the top level. As we add more targets (Nostr sync, TUI, etc.) this will get messy. Should think about a cleaner layout — maybe a workspace, shared crate for config/timezone logic, etc.
