Tightens the backend Docker ignore list so production builds send a much smaller backend context to Docker/BuildKit.
This targets the Coolify failure where deployment timed out while loading the Docker build context, before app compilation started.
Validated with
docker build -f backend/Dockerfile backendandgo test ./....
