Better heatmap scale UI and controls

As u/ExdigguserPies said on reddit:

I would prefer the option of a fixed scale and be able to set the min/max values, so when I scroll around the scale doesn't change.

I think it'd also be good to have a key that showed what the values were for the current colours.
