feat: add a docs website for Coldark

Changes

• Adds a docs website for Coldark using Starlight.

Warning

WIP. Some things have been scaffolded using AI and so, this needs some work, both for the theme and the contents.

TODO:

• Reworks the theme (WIP)
• Rewrites the contents (WIP)

Because the colors are now documented here, this should unblock #10 (and #11 probably) and the coldark-assets package can probably be removed in another PR.
