docs: align active CLI demo PyPI pin to klickd==4.1.0 - #129

Update the active install/demo guidance to pin the current stable SDK release (4.1.0) in the v4 CLI demo. Touches only live install steps and the demo's shown package banner; historical/changelog mentions and the wire/payload format references (API frozen at v4.0.0) are left intact.
