Add comprehensive organization README and profile documentation

Creates foundational documentation for the EzAttend organization to establish presence and guide contributors.

Changes

• README.md: Organization overview with mission, features, structure, getting started guide, contributing guidelines, tech stack, and contact info
• profile/README.md: GitHub organization profile page with welcoming introduction, mission statement, contribution pathways, and quick links

Structure

Both READMEs follow GitHub conventions for .github repositories:

• Main README serves as organization documentation hub
• Profile README displays on organization landing page
• Modular sections support easy updates as repositories are added
• Professional tone with clear navigation and calls-to-action

Documentation is extensible and ready for the organization to scale.
