chore(vcpkg): track the v1.0.2 release

Summary

• update the checked-in LogIt++ vcpkg overlay from the development source revision to immutable tag v1.0.2;
• set the port version to 1.0.2;
• record the SHA512 of the GitHub release archive.

Validation

• the release tag exists and points to the green release merge commit;
• tag-triggered documentation publication succeeded and published Version: 1.0.2 without -dev;
• archive SHA512 was calculated from the v1.0.2 tag archive;
• git diff --check passed.

This is the post-release overlay update for the already published v1.0.2 release.
