Version bump to v2.0.0 across all version references in codebase. Updates configuration defaults, documentation examples, source metadata, and test fixtures for consistency with the new release version.

Files Updated:

• Config/Scripts: config/example.yaml, scripts/install.sh, scripts/install.ps1
• Docs: README.md, WINDOWS_INSTALLATION.md, docs/plugins.md
• Source: cmd/allora/init.go, pkg/troubleshoot/troubleshoot.go, pkg/plugins/plugins.go
• Tests: pkg/config/config_test.go

Build verification:

$ ./bin/allora --version
allora version v2.0.0 (commit: a565da1, date: 2026-01-28T10:43:58Z)

Release notes and changelog were already present in CHANGELOG.md and RELEASE_NOTES_v2.0.0.md.
