docs(ep3): name the schemas in the Organization note

Slide 7 said:

Organization does both at once: an extension at the root, and an embedded object under the address property.

"An extension at the root" is a nominalisation that makes the reader reconstruct what is being extended, and it names neither schema. The diagram directly above the note shows Thing.schema.json and Address.schema.json by name, and the code panel shows "allOf": [ { "$ref": "Thing.schema.json" } ].

Organization does both at once: it extends Thing in allOf at the root, and embeds Address under the address property.

Both halves are verbs now, and both name the schema on screen. "in allOf at the root" is the phrasing the later comparison slide already uses.
