docs: apply plan-lifecycle standard + refresh README/metadata for AD1/AFF4#5

The cross-platform-binary and hardening plans are fully built and the memory Phase-2 walker plan is shipped — archive them (git history is the archive). Their durable memory-mounting decisions are captured in ADR 0003. The partially-built memory plan is rewritten to a lean current-state roadmap covering only the remaining phases. Add AccessData AD1 and AFF4 (disk + logical) throughout: the tagline, quick-start auto-detect list, a new Logical images section (AD1 + AFF4-Logical, lazy, encrypted-refused) and AFF4 in Containers.
