Bring the README and origins doc up to the product's present - #144

Linux ships, the hosted web app and phone pairing are flagship features, and a Docker self-host door just opened, so the origins doc no longer describes remote surfaces as being phased out and no longer claims macOS and Windows only. Provider language softened from phased-out to actively-maintained-today with the door open for more. Origins framing keeps full T3 Code attribution while noting inspiration and contributions flow both ways. README gains the Docker quick start alongside the other install paths.

Requested by Will after reviewing the package page: no more macOS-and-Windows-only claims (Linux ships), no more definitive phased-out language about providers or remote surfaces (hosted web, pairing, and Docker self-host are now flagship; more providers stay on the table), warmer origins framing that keeps full T3 Code attribution while noting inspiration and contributions flow both ways, and a Docker quick-start section in the README since the ghcr package page renders it.
