Document keep-by-omission for column_cases without default rules (#80) - #82

Conversation
Document that column_cases without a matching case and without a default rules entry leave the cell unchanged, and that this pattern is supported for selective anonymization. Add a cookbook example and a regression test covering INSERT/COPY passthrough plus coverage. Co-authored-by: andy <andy@wearecrew.com>

Summary
Closes #80.
Documents the intended semantics for selective anonymization when a column has
[[column_cases.…]]but no default[rules]entry:rulesstrategy still applies when no case matches (unchanged). Also documents how this coexists with the explicit
keepstrategy from #77/#78 (preferred for “default scrub + allowlist exceptions”).Rebased onto latest
