Align Mimir public release docs

Summary

• replace stale public links to deleted launch-posting-plan docs with current release surfaces
• update STATUS and launch readiness for the published v0.1.0 release
• remove public GitHub template references to AGENTS.md while preserving product docs for Claude/Codex integration paths
