[8.1] refresh deps: doctrine/orm 3.7.*, doctrine-bundle 3.3.* - #23

Move to orm 3.7 and normalize doctrine-bundle to the pinned-minor form. This repo does not call Criteria::orderBy(), so the collections 3.x Order enum change does not affect it. Co-Authored-By: Claude Opus 5 (1M context) <noreply@anthropic.com>
