This upgrades Redis to the latest 5.x release and uses the CLI rather thank custom scripts to bootstrap the cluster configuration. In doing so it removes the need to build a custom docker image and override the entrypoint. I also shortened/simplified the naming a bit since the config files for the cluster aren't really templates.
