Add MiniMax preset provider defaults

Reason: Add MiniMax as a preset LLM provider with default models and region presets.

Adds MiniMax to the backend provider registry and default model resolver, updates the BYOK profile UI with the new preset provider and MiniMax model choices, and adds targeted tests for the new preset path.

I cleaned up the MiniMax additions so the new provider documentation and test docstring are in English, and pushed commit b89e6e9. I ran the three focused backend test files (41 tests passed) and git diff --check.
