This adds a Linux shell version of the existing Windows build script so contributors can generate the model outputs from a Linux environment. The script follows the same build sequence as
build-windows.bat, usesdotfromPATHby default for Graphviz, and allows overriding it withGRAPHVIZ_DOTwhen needed. Verified withbash -n build/build-linux.shandgit diff --check.
