The .gitignore pattern `models/` was causing hatchling to exclude healthchain/models/ and healthchain/interop/models/ from the package build. Add negation patterns to explicitly include these directories. This fixes ModuleNotFoundError when importing from healthchain.models in pip-installed versions of the package.
