docs: point install and jury docs to the judge test build (merge: Codex after MERGE-FÄHIG + green CI) - #9

README section 7 (EN/DE) now starts with the judge test build from the latest release (wheel install, full console, demo mode) and keeps the source install below it; the old 2026-10-08 source archive link is gone. A line under the demo video links the test build. jury-demo, submission-readiness and RELEASE_GATE get a dated 2026-10-13 update that records the completed owner GUI acceptance; their 2026-10-08 sections stay as the historical record.
