docs: publish Snapshot API reference - #154

The Snapshot API spec has been published to docs.api.epilot.io/snapshot-api.yaml and referenced in the changelog since June, but was never registered in redoc.config.js, so no /api/snapshot reference page existed. Register it next to the Blueprint Manifest API and regenerate the API discovery document.
