Although not an official extension, it is supported by threejs and gltfpack, and has an old PR on the GLTF spec which seems to be sadly not merged (see KhronosGroup/glTF#2235).
Basically a copy and paste of EXT_texture_webp.
Seeing that AVIF seems to be positioned to be the next-gen image codec and is fairly widely supported, it would be useful to have this extension. I would be interested in using this.
