docs: refresh all docs + translations for the beta.25/26 features

Brings the docs up to date with everything shipped in v2.16-beta.25 / beta.26. No code changes — docs only, verified against the current firmware.

What was stale (found by an audit against the code + releases)

• README.md — Features section was missing 5 of the 6 newest features; Credits omitted this cycle's contributors; the Force-LHD / Telemetry-Off rows and the CAN-ID table were out of date; the handler count was stale.
• README_zh-TW.md / README_zh-CN.md — badly behind: ~5 features vs the current set, wrong app name / .fap filename, old fbt build flow, a 3-row CAN table, and no VIN-ban caution or Getting-Started/flasher section.
• changelog.md — two releases behind (no beta.25/beta.26).
• ROADMAP.md — frozen pre-v2.15; Track Mode still listed as a TODO; v2.16 candidate: 0x229 SCCM_rightStalk AP engage for pre-Highland HW3 #95/v2.16 candidate: LILYGO T-2CAN dual-CAN platformio env #96 shown as open.
• esp32/README.md / HARDWARE.md / SECURITY.md — stale feature tables, a non-existent esp32-twai build env, the T-2CAN mislabeled as "dual MCP2515", and TX-surface bit lists that predated the new features.

What changed

• All three READMEs now list the full feature set (incl. Summon EU Unlock, Continue on Green, RHD override, Telemetry Off, AP branch/tier selector, adjustable Track Mode) and a consistent CAN-ID table + handler count (42: 18 TX / 24 RX). Chinese READMEs rewritten to parity, app/filename fixed (tesla_mod.fap, "Tesla Mod"), build flow updated to ufbt, VIN caution + Getting-Started added.
• changelog.md: beta.25 + beta.26 entries. ROADMAP.md: shipped items checked off, Track Mode frame corrected (0x313), status re-anchored to beta.26.
• esp32/README.md / HARDWARE.md / SECURITY.md: feature tables, build env (m5stack-atom), T-2CAN description (TWAI + MCP2515), and the TX-surface bit lists (added 0x313, expanded 0x3FD/0x3F8) all corrected.
• Credits updated across all READMEs: @ssw0209-sys, @p0sixturtle, @dahua910, @HamzaObaidat, @fboulegue, @densen2014, @dunckencn.

Every DBC/bit/env claim was re-checked against fsd_logic/, esp32/.firmware/, and platformio.ini.
