This PR fixes many spacing and formatting inconsistencies across the docs. Also fixes links on the main
README.md. This mostly conforms tomarkdownlint, since I have that plugin enabled in my VSCode and just fixed most of the items it called out. This increases consistency in the formatting of the documentation.
