This PR is an initial pass on creating an indexer for OrderBook events on EVM chains. The primary goal is to track Order lifecycles and create aggregated metrics across Solvers, Chains, Tokens, and overall Volume.
It was primarily developed by claude and modeled on existing indexers after some exploration of this existing repo.
