[AMM-163] apply recent rust-sdk tx-sender updates to ts library

Description

📔 if approved, i will aim to merge #1 first, and this PR's base branch will switch to main. the current setup is to keep a nice diff while the other PRs changes are reviewed.

Retroactively apply some tx-sender features from rust -> ts. Note that @solana/kit handles a lot of this out of the box. The main reason for these changes is that it aligns the Rust and TS interfaces.

• use num_required_signers from Message when building VersionedTransaction
  • This is natively handled by the @solana/kit library's partiallySignTransactionMessageWithSigners function
• add max compute unit limit to simulation instructions if none are provided
  • The TS library will not fail to build a transaction if the simulation fails, but you will always have to simulate the transaction. If you know how many CU's you want to use and skip simulation, you are unable to do so today.
• optionally simulate for compute units, use correct number of default signatures

Run the full setup and test commands:

yarn clean && yarn && yarn build && yarn format && yarn lint && yarn test

Unit tests

Update the ts unit tests to verify that the compute unit estimators are or are not called
