Documentation Update

Updated README.md to reflect the changes in PR #34:

• Changed [agent] section documentation to [[agents]] array format
• Added documentation for new fields: name, type, replicas, extra_packages
• Added examples showing multiple agents and replica swarms

Note: The external documentation at stereos.ai/reference/jcard-schema will also need updating. The documentation repo (papercomputeco/stereos.ai) was not accessible from this environment.
